Sometimes you need a cookie. In this case, an extra large cookie. Today I used a pizza pan to make my cookie.
Giant Oatmeal Chocolate Chip Cookie
Preheat the oven to 350 degrees F. In a large bowl, combine 3/4 cup vegetable oil and 1 cup packed brown sugar until creamy.
Add 2 eggs and 1 teaspoon vanilla and beat well.
Add combined 1 1/2 cups unbleached wheat flour, 1 teaspoon baking soda and 1 teaspoon cinnamon, mixing well.
Add 3 cups uncooked oats, 1 cup chocolate chips, and 1 cup golden raisins. Mix well. Press the cookie mixture into an ungreased 14 inch circular metal pan using waxed paper.
Bake 20 minutes until light golden brown. Cool before storing in tightly covered container. Sampling the cookie is highly recommended!
